Vegetarian Fried Rice

I used to hate sesame oil. I still gag when I smell it straight out of the bottle. However, it goes really nicely in this dish.  This is meatless, which you know makes me happy!


2 tsp. sesame oil
1/2 tsp. ginger
1/2 tsp. minced garlic
1 carrot, peeled and shredded
1 small green pepper, chopped
4 oz. mushrooms, sliced (or 1 can, drained)
4 servings cooked brown rice
1 cup frozen peas
3 Tbsp. reduced sodium soy sauce
2 eggs, beaten (omit eggs to make it vegan)
black pepper to taste

In a large skillet, cook the carrots, green pepper, mushrooms, ginger, and garlic in the oil for a couple of minutes. Add the rice, peas, and soy sauce and combine. Push rice mixture to side of skillet, and cook eggs in other side. Mix the eggs into the rice mixture.

  1. I tried this recipe today and YUM! However, I am super sick right now so I found an easier way to make it that I wanted to tell you about! My store has frozen brown rice pilaf (brown rice, carrots and peas) so I used that, onion, garlic, shrimp and soy sauce. So easy and so yummy!

  2. I am in awe how diligent you are in cooking healthy food for yourself. Just a little suggestion to make the fried rice even healthier - add "natto," which is Japanese fermented soy bean. It can be found at any Japanese food store. It will seem a bit wierd, but when you cook it, it adds a nice flavour and loses its sticky consistency. The Japanese swear by it as a health food - full of protein and low fat.
