This is a nice change from the usual chili made with ground beef.
1-2 onions, chopped
2 cloves garlic, minced
3 cups chicken broth
1/2 tsp. ground coriander
2 Tbsp. lime juice
1 tsp. ground cumin
1/2 tsp. dried oregano
1/4 tsp. Tabasco sauce (or other hot sauce)
1 can white corn, drained
1 can great northern beans, drained
1 lb. cooked chicken breast, shredded
Heat a soup pot over medium heat and spray with cooking spray. Add onions and garlic and cook until onions are soft. Stir in remaining ingredients except chicken. Heat to boiling. Reduce heat and simmer 20 minutes. Add chicken and simmer until hot. Serves 4.
