These look fantastic. Thank you for sharing them! Just curious, do you use the regular pudding instead of the sugar free for a reason? Does it make a difference in the taste?

I don't really like the taste of sugar free pudding, so I use the regular. You can certainly substitute, but make sure you cut back on the amount used. I would use about 1 tsp. of sugar free mix for each Tbsp. of regular mix. The sugar free mix is more concentrated.

The gums are tricky to get the right amount. I would probably start with a 1/4 tsp, then add a little if it needs it. If you add too much at once, it's basically inedible.
