Pumpkin Spice Cookies

I used to make muffins with these two ingredients, but I was really in the mood for cookies a few nights ago, so I decided to turn them into cookies instead. They are SO good, and SO simple--and only 64 calories each!

I'm sorry, but this recipe has been migrated over to my everyday blog, Runs for Cookies. This is a direct link to the recipe. Thanks for stopping by!  --Katie

  1. I've made these a few times! Very tasty! You can also combine cake mixes with a can of diet (or regular) soda only, greek yogurt and water only, etc for healthier options! I've made brownies with a brownie mix and a can of diet dr. pepper when I was really craving something! :) Funfetti mix with a can of strawberry soda is really good too.

  4. Quick question....in the ingredients you listed "Duncan Hines Pumpkin Spice Cake Mix", but in the picture you actually have just plain old spice cake. Have you ever made it with just spice cake and is it just as good or am I better off waiting for the Pumpkin Spice Cake Mix to hit the shelves at my store? Cause I gotta tell ya, living overseas and having only the commissary to shop at, I could be waiting a mighty long time. :)

    1. Oops, that was a typo on my part! It's just Spice Cake Mix. Sorry!

  5. I recently made these and wowie-wow-wow....they were fantastic! I've been giving them out to all my friends and neighbors & everyone keeps asking for the recipe! Thanks so much for posting! Also I added one tiny little 1/2 tsp of Betty Crocker cream cheese cookie icing to each one and holy smokes! It was freakin' delicious & it only added a measly 10 extra calories to each cookie.

  8. Thanks for all of your great recipes! These cookies were yummy and just what I needed to fill my pumpkin craving without too many calories! When you made them as muffins, do you know how long you baked them and how many calories each? Thank you!

    1. It's been a long time since I made them, but I think I just followed the directions for cupcakes on the box.
