Southwest Chicken & Beans

This is a favorite slow cooker meal among a lot of my mom-friends. It's so easy to throw together in the morning and then have a healthy, hearty meal to eat for dinner. I like to serve this over rice, and with cheese on top if I have the calories to allow for it. However, it's also good on its own.

  6. So I made this tonight! It turned out good. I'm going to experiment with different salsas to see if I can give it a little kick. I LOVE SPICY FOOD! The rest of the family doesn't love change. (they'd rather i make chicken, rice and a veggie every single night...BORING!!) I like to mix it up. This one will definitely be in the mix every once in a while! =) Thanks!

  8. Made this tonight, it was AMAZING! I was skeptical on how it would taste, but my family loved it! I did serve it taco style for them. I hope it makes good leftovers because I will be having it again tomorrow.

  9. I made a batch of this yesterday just to have ready for quick meals throughout the week, no real plans for it though. Then I came down with a cold and really wanted soup tonight, so I poured some chicken broth over this and heated a bowl in the microwave. It is just like tortilla soup, so good!

  10. Made this for dinner tonight! SO GOOD! Our 5-year-old LOVED it and cleaned her plate! Aside from a little "operator error" (accidentally unplugged the crock pot half-way through the cooking!!) it turned out perfect! For garnishes, we added my husband's homemade guacamole, a dollop of sour cream, a sprinkle of cheddar and some Chipotle Tabasco sauce (for the grown ups) :). We're making another one of your recipes for dinner tomorrow!
