BBQ Chicken Pizza

My family eats pizza for dinner every Friday, and I found myself short on the usual ingredients. I had to throw something together really quickly, and I made this BBQ Chicken Pizza on the fly. It turned out really good!


BBQ Chicken Pizza

Crust:
2 cups of Heart Smart Bisquick
1/4 cup fat-free sour cream
1/4 cup very hot water

Toppings:
1/4 cup barbecue sauce (I like Sweet Baby Ray's)
6 oz. cooked chicken, chopped or shredded
2 oz. shredded 2% cheddar cheese
thinly sliced red onion
1/4 cup Hormel crumbled bacon

To make the crust, just combine the Bisquick, sour cream, and water. It will look dry, but if you use your hands to knead it, it will come together. Roll it out onto an ungreased cookie sheet.

Spread the sauce evenly over the crust. Top with chicken, cheese, onions, and bacon. Bake at 400 degrees for about 15-20 minutes, until crust is light brown and cheese is melted.

I didn't calculate the nutrition info, but I put it into the Recipe Builder on the Weight Watchers site, and it has 5 PointsPlus per slice (if you get 8 slices from the pie).

Chili Dog Pizza

Holy smokes, was this ever good! I don't know why I never thought to do this sooner.



Chili Dog Pizza

1 pizza crust (homemade, store bought, pre-cooked, whatever!)
1 can hot dog chili (found with the canned chili, it's usually in a smaller can--14 oz?)
4-6 hot dogs (I used 8 skinny fat free dogs, but it seemed like a little too much, so I'd go with 5 maybe)
cheddar cheese
onions, chopped fine
mustard

I'm not being specific with the amounts of everything used, or the nutrition content (because it completely depends on the products you use). Just pre-bake your crust a little, top with the chili sauce, cheese, and hot dogs. Bake until the cheese is melted and dogs are starting to brown. Then top with raw onions and mustard. Beware--it's very messy! ;)

Breakfast Pizza

This is a very hearty breakfast pizza. I imagine it would be good with different meats and veggies. Ham and spinach would be good!






Breakfast Pizza
1/2 recipe of whole wheat pizza crust (see that recipe here)
1 pkg frozen chopped broccoli, thawed and squeezed dry
3/4 cup of 2% cheddar cheese
3 eggs, beaten
3/4 cup milk
2 Tbsp. chopped green bell pepper
6 strips of cooked bacon, crumbled (I used the Hormel Black Label bacon that is 70 cals for 4 slices)
onion powder, salt, and black pepper to taste (I used about 1/4 tsp of each)

Spray a pie plate with cooking spray and sprinkle a little flour around the bottom. Spread the dough out along the bottom and slightly up the sides of the pie plate (adding flour if necessary to keep it from sticking). Spread the broccoli out on the crust, and top that with 1/2 cup of the cheese. Sprinkle the bacon and peppers on top of that. In a small bowl, beat the eggs, milk, onion powder, salt, and black pepper. Pour the egg mixture over the whole thing, and then top with the remaining 1/4 cup of cheese.

Bake at 350 degrees for 35-45 minutes, until eggs are just set (it took 35 minutes for me). Let it sit for 5-10 minutes before cutting.

Whole Wheat Pizza Crust

I never thought I would like whole wheat pizza crust, but when I ran the Ragnar Relay, I ate pizza on a whole wheat crust and it was amazing! So now this is the only pizza crust that I make.


Breakfast Pizza on whole wheat crust


Whole Wheat Pizza Crust
1 3/4 cups whole wheat flour
1 cup hot water
1 Tbsp. olive oil
3/4 tsp. salt
2 tsp. yeast (one packet)

Combine in a bowl until a ball forms and cover with plastic wrap. (Or you could use a bread machine, which is what I usually do). Let rise for 15-20 minutes. Spread out dough on a pizza pan and bake at 475 for about 5-8 minutes. Then top with your toppings, and bake again until cheese is bubbly and toppings are done.

BBQ Chicken Pizza (single-serve)

I was craving BBQ chicken pizza for the longest time, and the frozen lean cuisine one I tried was TERRIBLE.  I played around with tortillas to make them seem more crust-like... and discovered that pre-baking them makes a fabulous pizza crust!  Don't skip the pre-baking... it makes it delicious!

The type of barbecue sauce you use can either make or break this recipe. Pick a sauce you love, obviously. I use Sweet Baby Ray's Hickory & Brown Sugar.



BBQ Chicken Pizza

1 tortilla or flat bread (shown in the picture is white lavash bread)
3 oz. cooked chicken, torn into chunks (I bought a bag of frozen chicken breast strips)
2 Tbsp. good barbecue sauce (I love Sweet Baby Ray's)
1-2 paper thin slices of red onion, roughly chopped
1 oz. low-fat cheddar cheese

Preheat oven to 375. (While it's preheating, I usually prep the other ingredients). When it's preheated, put the tortilla on a baking sheet (no oil or anything) and put it in the oven for 5 minutes. Flip it over, and heat for another 5 minutes. It'll be stiff and crispy, but still a little pliable. Meanwhile, combine the chicken, barbecue sauce, and onion in a small bowl and microwave for about 30 seconds just to heat it a little and soften the onion. 
When the tortilla is ready, spread the chicken mixture on the tortilla--it may seem skimpy, without enough sauce or something, but don't add more sauce. It'll be TOO saucy.  Top the whole thing with the cheese. Bake for another 5 minutes or so, until the cheese is melted. Cut into quarters.
